Seedless dried grapes are classified as Sultanas and Raisins (Thompson Type) according to the drying method. Sultanas are deeped into a solution of water, potassium carbonate and olive oil, in order to fasten the drying process. Raisins (Thompson Type) are not deeped into solution and dried naturally and it takes more time more time than sultanas to be dried. Because of this reason Raisins (Thompson Type) are darker colour than Sultanas.Sultanas are classified as type 7 , 8 , 9 , 10 , 11 according to colour. These types can also be more light in colour by bleaching (applying SO2 ). This colour classification is based on the Turkish Standard of "TS3411".
